This is our go-to fruit cobbler recipe. We make it often with whatever fruit we have on hand or have hauled out of the freezer. It's one of those recipes that makes you feel like a proper baker without actually requiring you to be one.
You melt the butter right in the pan, pour the simple flour-and-milk batter over top, then spoon the fruit mixture over everything and let the oven do the work.
It comes out golden, buttery and perfect every time.
Serve it warm with a scoop of vanilla ice cream and, honestly, you're the hero of the evening. Its one of those desserts that take no time to whip up but gives the impression you've been in the kitchen baking all day.
Easy Peach Cobbler

1/2 cup butter

3/4 cup flour

1/2 cup sugar

2 tsp baking powder

3/4 cup milk

4 cups fresh peaches, sliced

3/4 cup sugar

1 teaspoon vanilla

Method
Preheat the oven to 350°F.
Put the butter in a 9x9-inch baking dish or cast-iron skillet and place it in the oven while it preheats, allowing the butter to melt.
Meanwhile, mix the flour, 1/2 cup of sugar, baking powder and salt. Stir in the milk until you have a smooth batter.
In a separate bowl, toss the peaches with 3/4 cup sugar and vanilla.
Once the butter has melted, carefully remove the pan from the oven. Blob by spoon the batter over the melted butter. Don't stir it.
Spoon the peaches and their juices over the top of the batter. Again, don't stir.
Bake for approximately 40-45 minutes, until golden and bubbling around the edges.
Let it cool for a few minutes, then serve warm with a generous scoop ;-) of vanilla ice cream.
